Abstract
Intelligent packaging is a food packaging system, which can monitor and inform food conditions to consumers in real time. In this work, we successfully fabricated chitosan/PVA blend films with anthocyanines extracted from Brassica oleraceae (red cabbage) by electrospinning technique, using water as solvent media. The prepared samples were characterized by SEM, UV, and FT-IR analysis. The color variation under different pH solutions was measured through the CIELab scale. The results show that electrospun chitosan/PVA films with red cabbage is very sensitive to pH variations. Therefore, it has high potential to be used as a color indicator of food quality changes through the detection of changes in the pH of packaged food products.
